CITRUS RAISIN FISH STEAK WITH PINEAPPLE SALSA

Citrus-Raisin Coated Fish Steak and Pineapple Salsa

A simple and flavorsome fish steak in supper that’s so easy to put together what else do you need. In this recipe you can use any fish as you like. I uses king fish steaks. It can be oven roasted also.

Ingredients

  • 4 small Fish Steaks
  • 2 tbsp. Raisins
  • 1 inch Ginger
  • 2 Green Chillies
  • 1 tbs. Honey
  • Few Basil Leaves
  • Few Spring Onions
  • 1 tbsp. Lemon Juice
  • 1 tbsp. Olive oil
  • Salt to taste
  • ½ cup Pineapple Chopped
  • 2 Tomatoes, Chopped
  • 10 Black Olives
  • 6 Shallots Halved
  • 1 tsp. Cumin Powder
  • 1 tsps. Olive Oil
  • Few Basil Leaves Shredded
  • Salt to taste

Instructions

  1. In a mixer finely blend raisins, ginger, green chillies, honey, basil leaves, spring onion, salt, lemon juice, and olive oil.
  2. Pour 1/2 of this mixture over the fish in shallow dish. Cover and chill 30 minutes.
  3. Roast the fish in a pan.
  4. Simmer remaining 1/2 of marinade in skillet and Spoon over cooked fish steaks.
  5. For the salsa, mix chopped pineapple, chopped grape tomatoes, black olives, halved shallots, cumin powder, salt, olive oil, and shredded basil leaves. Refrigerate the salad.
  6. Serve the steaks in a plate with the chilled salsa. Drizzle olive oil and serve.
