CREAMY MUSHROOM SOUP WITH MUSHROOM FRITTERS

Christmas is just 11 days away, we have 25 days of lent before Christmas, so I am keeping my daily cooking simple and vegetarian. So I started exploring my collection of cookbooks for new and different recipes, where ever I hear a new vegetarian recipes I pen it down, I am sharing one of those today.

Its winder time and so need a soup or a deep fired fritters or something spicy. These thoughts made me to recreate this recipe. Creamy mushroom soup, yes it’s a soup but it has got the crunch from the mushroom fritters serves with it.

Creamy Mushroom Soup with Mushroom Fritters

Creamy Mushroom Soup Recipe

Ingredients

  • 200 grams Mushroom
  • 1 Potato Boiled and Sliced
  • 1 Onion Chopped
  • 1 tsp. White Pepper Powder
  • 8 Garlic Cloves Finely Chopped
  • 1 tbsp. Leaks Chopped
  • 2-3 Chives Chopped Fine
  • 1 cup Cream
  • Salt as Required
  • 1 tbsp. Butter

Instructions

  1. Heat butter in a pan.
  2. Add onion and cook till onions are soft.
  3. Once onion is soft not brown add potatoes and ½ tsp. salt.
  4. Now add leaks, chives and garlic and cook for few minutes
  5. Slice mushrooms and add it to the pan. Add water as required.
  6. Cook until mushrooms are well cooked.
  7. Add white pepper powder and cream and remove from heat.
  8. Blend with a blender till smooth.
  9. To serve, serve it with the mushroom fritters, garnish with chive springs and pepper and dry herb mix.

Mushroom Fritters Recipe

Ingredients

  • 200 grams Mushroom
  • 1 Potato Boiled Mashed
  • 5 Garlic Cloves Finely Chopped
  • 1 tsp. Italian Dry Mixed Herbs
  • 2-3 Chives Chopped Fine
  • ½ tsp. Pepper Freshly Crushed
  • 1 tbsp. Corn Flour (more as required for coating)
  • Salt as Required
  • 1 tbsp. Butter
  • Oil for shallow frying

Instructions

  1. Heat 1 tsp. oil in a pan with butter.
  2. Add chopped garlic to the pan and fry till light brown
  3. Chop mushroom and add it to the pan and mix well and fry. This will remove all the water in the mushroom.
  4. Switch off and transfer this to a plate, let it cool for a while.
  5. To the mushroom mixture add salt, pepper, mash potato and chopped chives and mix well.
  6. Add 1 tbsp. corn flour to the mixture and mix well using hand, if the mixture is too soft to handle can add little more corn flour.
  7. Make round shaped tikki, dust with some extra corn flour.
  8. Shallow fry these tikkies till golden brown both sides.
  9. Serve with ketchup or a as a burger along with pickled cucumber.
