Blueberry Cake With Cream Cheese Frosting Recipe

Ingredients

Blueberry Cake

  • 3 cups Cake Flour
  • 2 tsp. Baking Powder
  • 1/2 tsp. Salt
  • 1 cup Butter
  • 2 cups Sugar Powdered
  • 4 Eggs
  • 2 tsp. Vanilla Extract
  • 1 tbsp. Lemon Zest
  • 1 cup Butter Milk
  • 2 cups Blueberries

Lemon Cream Cheese Frosting

  • 2 cup Cream Cheese
  • ½ cup Butter
  • 2 tbsp. Lemon Juice
  • 2 tsp Lemon Zest
  • 1 tsp Vanilla Extract
  • 5 cups Icing Sugar

Instructions

Blueberry Cake

  1. Preheat oven to 180 Degree C.
  2. Prepare 3 8” pans with butter and lightly dusting with flour.
  3. Line with parchment paper circles.
  4. Sift together 3 cups cake flour, baking powder and salt. Set aside.
  5. In the bowl of a stand mixer or hand mixer beat butter and sugar on medium-high.
  6. Beat until pale and fluffy, about 4 minutes.
  7. With the beater on low, add eggs one at a time.  Mix well after each egg.
  8. Add vanilla extract and lemon zest.  Mix to combine.
  9. Add the flour mixture in three batches, alternating with the milk, beginning and ending with the flour mixture.
  10. Do not over mix.
  11. Stop the mixer and scrape down the bowl.
  12. In a small bowl, gently toss blueberries with some cake flour to coat.
  13. Using a spoon or spatula, gently fold blueberries into batter, being careful not to break berries.
  14. Divide batter evenly between the pans.
  15. Bake for 30-35 minutes, until toothpick inserted into center comes out clean.
  16. Let cool in pans for 5 to 10 minutes, and then remove to wire rack to finish cooling.

Lemon Cream Cheese Frosting

  1. Beat cream cheese until smooth.
  2. Add Butter and beat again till smooth and fluffy.
  3. Now add vanilla, lemon zest and juice and mix until combined.
  4. Gradually add shifted icing sugar in 2-3 additions.
  5. Beat until smooth, and reach to the desired sweetness.
  6. Add more icing sugar or juice as needed for easy spreading.
  7. Assemble the cake according to once interest.
  8. Store in refrigerator.  Serve at room temperature.
