These are very easy to make. Crepes with Strawberry Cream Cheese Filling my kids love them.

For those of you not familiar with crepes, crepes are similar to Kerala coconut pancakes that are often folder over or rolled up and eaten. They can be both sweet and savory….

Making them with our yummy strawberry cream cheese filling is by far my favorite!

Once you have a good basic crepe recipe, you have a door to endless flavor possibilities! Enjoy!

Strawberry And Cream Cheese Crepes


Ingredients

  •  1 cup All Purpose Flour
  • 1½ cups Milk
  • 2 eggs
  • 3 tbsp. Butter
  • 1 tsp vanilla extract
  • Pinch of salt
  • 4 ounces cream cheese, softened
  • 3 tbsp. Butter
  • 1 tsp. vanilla extract
  • Pinch of salt
  • 4 ounces cream cheese, softened
  • 6 tbsp. Whipping Cream
  • ¼ cup Sugar
  • 2 cups Fresh Strawberries

 

Instructions

  1. Place Batter ingredients in a blender.
  2. Pulse 10 times, or until smooth and lump free.
  3. Place Batter in fridge for 1 hour.
  4. Heat a nonstick skillet over medium high heat.
  5. Add ¼ tsp. butter and melt.
  6. Add ¼ cup batter and quickly swirl to spread.
  7. Cook the first side for 1 minute or until there are light golden brown patches.
  8. Flip and cook the other side for 30 seconds.
  9. Slide out of the skillet onto a plate.
  10. Repeat with remaining crepes, overlapping them into the board.
  11. Beat cream cheese, whipping cream and Sugar till light and fluffy
  12. Add vanilla for flavoring.
  13. To serve spoon 2 tbsp filling and strawberry into each crepe and roll up.
  14. Arrange crepes seam side down on plate.
  15. You may top with extra cream if desired.
