Indian Chilli Chicken


Ingredients

  • 250 grams Chicken Boneless
  • 1 ½ tsp. Soya Sauce
  • 1 ½ tsp. Chilli Sauce
  • ¼ tsp. Pepper Powder
  • 3 tbsp. Corn Starch
  • 3 tbsp. All Purpose Flour
  • A Pinch Salt
  • 1 ½ tsp. Soya Sauce
  • 1 tsp. Chilli Sauce
  • ½ tsp. Chilli Paste
  • 1 tsp. Vinegar
  • ½ tsp. Sugar
  • 1 Onion Cubed
  • 2 tbsp. Garlic Finely Chopped
  • 2 tsp. Ginger Finely Chopped
  • 2 tbsp. Green Chilli Finely Chopped
  • 1 Capsicum Cubed
  • 1 tbsp. Celery Finely Chopped
  • 1 tbsp. Spring Onion Green Sliced
  • Oil to As Required

Instructions

  1. Clean and cut chicken in to small bite size pieces drain water completely.
  2. Marinate the chicken pieces with 1½ tsp soya sauces, 1 ½ tsp chilli sauce and ¼ tsp pepper powder.
  3. Let it marinate for at least 2 hours.
  4. Mix 1 ½ tsp soya sauce, 1 tsp chilli sauce, ½ tsp chilli paste, 1 tsp vinegar and ½ tsp sugar in a bowl and keep it aside.
  5. Sprinkle corn starch and flour over the marinated chicken along with salt and mix to coat well.
  6. Heat oil in a wok or deep frying pan.
  7. Once the oil is hot drop the marinated chicken pieces one by one on to the oil, fry till done. Do not allow the chicken to overcook.
  8. Drain the chicken pieces on a kitchen tissue.
  9. Remove the excess oil from the pan and keep only 2 tbsp.
  10. Now add garlic, ginger and green chillies to the pan and fry for a minute or 2.
  11. Add onion, capsicum and celery to the pan and mix well.
  12. Once the vegetables are just soft add prepared sauce and mix well.
  13. Let the sauce bubble up well.
  14. Add fried chicken pieces to the gravy, keeping the flame high.
  15. Mix well so that the chicken pieces get coated well with gravy.
  16. Serve with rice, noodles etc…
